This wine was made in the deliberate rosé style: The grapes were hand-picked, sorted and destemmed for overnight juice-skin contact, pressed, then aged sur lie for six months. As the skins contain most of the tannins, the structure of this rosé has less of a tannic mouthfeel than a typical saignée style rosé. It has a crisp, blanced acidity and is a delightful aperitif.
