Produced from the 2015 harvest of blocks 1 and 9 of the estate on September 3rd through the 9th, this wine was made in a deliberate rosé style: the grapes were destemmed for overnight juice-skin contact, followed by basket-pressing the juice to neutral barrels for fermentation sur lie. Five months barrel aging with lees stirring contribute a bit of richness and palate breadth the final wine. As the skins contain most of the tannins, the structure of this rosé has less of tannic mouthfeel than a typical saignée style rosé.
